Alugbati-Squash Saute

Vegetable is a  good sources of calcium, riboflavin and iron. Cooking and eating it fresh  is good for us. Got a cup of alugbati leaves from our little garden and prepared another quick and healthy recipe. Here it is.


2 cups alugbati leaves
2 cups squash, strips
1 bulb onion
2 cloves garlic
2 beaten eggs
1/2 cup water or as needed
1 tbsp ground pepper
salt to taste
cooking oil

Cooking Procedure:

Saute garlic and onion in cooking oil. When the sauteed aroma comes out, add squash strips and cover the pan. Turn to low fire and cook for five minutes before stirring again. Add seasoning, pepper, salt and water, if needed, and bring to a boil. Add the alugbati leaves and beaten eggs then cover. Wait a little to cook the leaves. Serve while hot.
