How to Make Cocoa Ube Polvoron


1) Buy ube powder or prepare own using this procedure. This ube powder was pulverized using mortar and pestle. The uneven particle size gives a delightful crunchy texture.

2) Prepare sweetened cocoa powder using this procedure. Homemade cocoa has butter that will be used to glue the pulvoron together.

3) Measure one cup ube powder. Roast it over low fire for about 15 minutes or until slightly brown. Stir continuously to prevent scorching. Let cool.

4) Mix one half cup brown sugar and one half cup ordinary milk powder. The nearby bakery supply has two kinds of milk powder, the ordinary and the skimmed milk. The store owner told me that ordinary has better taste quality.

5) a. To make bittersweet cocoa ube polvoron, mix one cup sweetened cocoa powder for every one cup mixture. Roast gently for one minute to melt the butter. Mold immediately using polvoron molder. I don’t have any so I used the one for tabliya.

b. To make a sweet cocoa ube polvoron,  mix one half cup sweetened cocoa powder to previously prepared mixture. Roast gently for one minute to melt the butter. Mold immediately using polvoron molder. Polvoron should withstand packaging and handling. If it breaks easily, mix  butter gradually until desired consistency is attained. Get butter from nearby bakery supply.

c. To make ube polvoron. Add butter gradually until the desired consistency is attained. Mold.

d. To make cocoa polvoron, repeat the procedure using all purpose flour. Continue the steps until 5)a or 5)b.

6) Wrap each polvoron nicely or serve it right away instead.
