How to Make Peanut Butter

Making peanut butter is easy especially if you have a good grinder that able to yield a very fine texture.

Materials
shelled peanuts – 2 kg
sugar – ¼ – ½ kg
refined salt – ½ tsp.
vegetable oil/corn oil – ½ cup
glass or plastic jars with new caps

Peanuts must be of good quality. Free from dirt,  mold and  aflatoxin.

Choose a  jar that is capable of providing an airtight environment for your product.

Equipment
measuring cups and spoons
weighing scale
carajay
stove
ladle
basin/tray
grinder

Procedures

  • Roast peanuts in frying pan until cooked. Stir constantly to avoid scorching. Cool.
  • Remove skins. Clean peanuts by using a winnower.
  • Grind peanuts in a cocoa or coffee grinder with sugar, salt and vegetable oil.
  • Pack in previously sterilized preserving jars.
  • Seal tightly. Store.

Note: Sugar maybe omitted if you desired a sugar free product.

The peanut oil will rise at surface after few weeks but it will not affect product taste, only the appearance. If this bothers you, add milk or whey protein as emulsifier to avoid this problem.

Another point of experiment is adjusting the amount of corn oil or using a different type of oil. However oil can be completely omitted.
