​Saving The Stale/Softened Biscuits and Chips

What I do not like with biscuits and chips? It stale so fast. It should be eaten immediately after opening. Its crispiness will surely loss after a while and will not be enjoyable to eat. Some with defective packaging are already stale even before opening.

For the sake of this article only. Stale refers to any softened crackers, chips and biscuits. Perfectly safe for human consumption but the peak of palatability is already lost. Stale may also refer to granulated and or moldy biscuits. The last two defects are not reversible.

a biscuit with biteCrunchiness or crispiness does not belong to any taste category but it has a big impact on food flavor. Skyflakes cracker is a biscuit with no perceptible flavor. However, eating it is very enjoyable. Why? Because of the crispy texture. I never like eating a softened Skyflakes. Banana and potato chips are good even without flavorings.

Biscuits and chips are dry products. When exposed for long period, sufficient atmospheric moisture maybe absorbed. Then softening will occur. It can be returned to its previous peak of palatability by driving the moisture away.

Heat it in microwave oven. Different products and brands and extent of staleness require different time and temperature combination. Try a single or two samples before loading a bigger batch.

Not applicable for chocolate filled biscuits.

My usual hangout is at my grandmothers’s balcony. The place where most of my relatives (mother side) do a get together as past time.

One day, my auntie was eating a biscuit. The biscuits were assorted and packed in a cellophane bag. My auntie gave me some of it and said it was cheap. The biscuit’s taste was good, just like branded competitors.

The taste was good and it looked so neat but the looks can be decieving. Who knows where it came from. Cheap products are doubtful.

This news by GMA7 Imbestigador made me doubt cheap products even more.

In San Jose del Monte Bulacan and Pandi Bulacan, There is a company named Rodisco. Sounds like the legitimate Rebisco but the two companies are entirely unrelated. Some of us are really good imitators.

Imbestigador caught this company recycling chocolates and biscuits. The informant stated that those commodities are intended for animal consumption but this company are selling them for human consumption. Where did their consience go?

Whole biscuits and chocolate are repacked. The broken biscuits and chocolates are ground, mixed with honey and packed in a cone like container. These recycled processed foods are called taktak.

Accoding to analysis, taktak foods have high coliform content. Bacterial coliform are responsible for outbreak of typhoid fever, diarrhea, hepatitis and cholera. Some of the taktak foods are hard to differentiate from the legitimate because some of them have brands.

Imbestigador seeked the help of local health units. Surprise inspection showed that the company has no proper storage facilities. The foods are just packed in sacks or large polyethylene plastics with no protection from dirt and other foreign objects. The worst thing, motorcycles are parked in food storage area.

In addition, the company lacks the following:

lot of water supply,
waste and garbage disposal,
lighting facilities,
sanitary toilets, and
updated medical certificates of personnel

Authorities are now investigating the source and distribution chanell of this company. Who knows, the yummy chocolate and biscuits you are eating might be from this company.

A Taste of Fresh and Crispy Jacobina Biscuits

I took the route of Indang-Amadeo-Tagaytay to deliver some tabliya to our customers. On my way home I took the route of Tagaytay-Mendez-Indang look for some automobile parts for my Izuzu C240 Diesel Engine. I stopped at four auto shops without success of finding the parts I need.

My last stop was at La Noceda Store,  located at town of Mendez near the police station. I stopped by not to look for engine parts but to buy some Jacobina Biscuits. This biscuits is famous in our place for its delicious taste and crispy texture. Many entrepreneurs tried to imitate the formula but they all failed.

The biscuit comes in square. Every square is like a hundred sheets of paper filed in a loose manner. The soft and crispy biscuits are good partner for hot coffee, hot tea or even any cold beverages.

I bought two large packs for my mother-in-law and my wife. The biscuit is the favorite food of my wife when she was pregnant on our eldest son.
