Eggplant Fritters

Ingredients:

1/4 kilo eggplant, mashed
1 cup tahong, unshelled, sliced
1 bulb red onion, chopped
2 cloves garlic, minced
1 cup flour
1/2 teaspoon baking powder
2 beaten eggs
ground pepper
salt to taste
cooking oil

Cooking Procedures:

Peel eggplant and slice thinly. Boil until tender. Drain and mash. In a mixing bowl, add mashed eggplant, unshelled tahong, flour, baking powder, beaten eggs and mix. Add red onion and garlic. Season with ground pepper and salt to taste. Mix thoroughly. Heat cooking oil in a pan, pour one scoop of mixed ingredients and form a circle shape then fry until golden brown. Cook over a low fire. Continue cooking for the rest of  ingredients. You can dip it to catsup or mayonnaise. Serve hot and enjoy eating!

Saba Banana Fritters, Maruya

Ingredients:

10 banana saba, slices
1/4 cup sugar
1 cup flour
1/2 tsp baking powder
2 spoon powdered milk
1 egg
1/2 cups water

Cooking Procedures:

Peel banana saba and slice thinly. Set aside. In a mixing bowl, pour flour and sugar. Mix well. Add baking powder, egg and water. Mix thoroughly. Then add the banana saba slices and stir. In a pan, heat cooking oil. Scoop 1/2 cup of banana mixtures to the hot cooking oil and make it circle shape. Deep fry until golden brown. Continue frying for the rest of ingredients. Sprinkle on a sugar. Ready to Serve. Eat it up!
