Our very first meat processing laboratory exercise set my mind confused about the common longganisa we usually get from the wet market. The book stated and our professor said, longganisa consist of 70 % lean meat and 30% back fat from pork. We even did an actual longganisa recipe so we could experience it first hand.
The product we produced was very different. It was all meaty that we could barely see fat traces. You know what I mean! The product we know and eat are mostly backfat. It is stuffed with fat fragments which could be easily seen upon breaking it to half. I assume the too much sweet taste is set to mask overly packed unhealthy thing.
Jollibee breakfast meal reminded me of this things. Their longganisa tasted like a hotdog and not a longganisa I know.
My toe is still in pain but not as painful as week ago. I am now walking fast and enduring the very slight pain.
Perhaps I have a gouty arthritis. The symptoms are quite similar. It already happened several times. It always strike on my left big toe. A sudden onset – I usually woke up with the feeling of intense pain and can barely walk. It happened after drinking softdinks and energy drinks on a daily basis and eating pork meat often.
Do drinking sofdrinks causes gouty arthritis? Yes it does. The beverage usually have fructose, the only sugar known to raise level of uric acid. It was proven by series of studies in America and Canada, the habit of drinking softdrinks increase occurrence of gout in men. It also includes other beverages with fructose.
Why do I still drink those?
I am a very sleepy guy. I go to bed late at night, about 11 to 12 midnight but wake up 7 to 8 in the morning. The seven to nine hours sleep should be enough but still need to sleep 3 to 4 hours at day time. I had a hard time attending my classes during elementary to college levels. I usually fell asleep in class and had a nap every break. When I was still employed, I usually hide somewhere to take a nap.
Taking a sleep very often should not be my habit. So much time is wasted. Drinking softdinks and energy drinks became my option to stay awake. I was drinking a softdrink and an energy drink everyday. I know that too much of it is not good for the health so I reduced my intake to once daily – softdrink only or energy drink only.
I totally stopped intake when I felt a toe pain for several days. I also stopped eating pork meat and drinking coffee and other artificial beverages. The pain gone away eventually.
I guessed my discipline was not enough. I started drinking softdrinks and energy drinks again. I am really more productive when having one. I can write three 300 words article straight, produce tabliya chocolates, do some researches, take care of our toddler and still have time for computer games.
Now I need to refrain from drinking artificial beverages forever. Being a sleepy guy is better than having a painful toe.
I woke up Saturday morning. I was surprised. My left toe was in pain. Getting up on my feet was hard. Walking was harder. There was a sudden impulse of intense pain on every step. Pain persisted the next day. I took Planax twice but there was no effect. Then my better half suggested to consult a doctor. To undergo examination and buy the right medicine. I refused!
This is not the first time I experienced this toe pain. It is happening every time I drink too much energy drink (like Cobra and Sting) and eat too much pork fat. I drink energy boosting beverage every time I am sleepy and need to finish a lot of works. On the other hand, pork fat is irresistible – its the most delectable part of meat.
If I see a doctor. He will give the right medicine to cure my toe pain. Perhaps advise me to refrain from eating those foods.
After one week of culprit foods abstinence, I am now walking straight though there is still a slight pain. I know the pain will go away eventually.
I never wanted to know the right over-the-counter drug for my toe pain. If I did, I might be tempted to eat those food again and just take medicine afterwards. Not good practice for the liver.
Food is like a fuel. It gives as energy to live. Energy to do our every day work and enjoy life. Just like fuel, it has impurities. Some have more impurities than others. Some are cleaner than others. Our body has mechanism to expel out those dirt but might fail if too much are taken. We have to watch carefully our food intake. We must take good and avoid bad.
Do you still remember the time when Philippines was plague by a very infectious disease. Not a human disease, its an illness of cloven-footed animals, the foot-and-mouth diseases (FMD). Hand-foot-and-mouth disease (HFMD) is a different matter and should not be confused with fmd.
FMD is a viral disease affecting cattle, buffalo, sheep, goat and pigs. It spread by direct contact (animals to animals, vehicles, insects, human, soils, etc..) or by air. Mode of transmission is fast that it was able to knock down our swine industry. Local and export market were severely affected. No one want to buy swine meat due to fear of being affected by the disease. I was only buying fish and vegetables during that time.
If you are wondering if it can be transmitted to humans, the answer is yes. People can get FMD but its a rare case. The virus is sensitive to stomach acid and rarely able to cause infection. You should be afraid more of mad cow disease.
Authorities strengthened its efforts to eliminate the dreaded disease. Now, we can nearly harvest the fruit of hard work.
Agriculture Secretary Proceso J. Alcala is optimistic that the Philippines will soon be declared entirely as free from the dreaded foot-and-mouth disease (FMD) by the World Organization for Animal Health or Office International des Epizooties (OIE).
With such favorable OIE declaration — expected to be formalized in May during the 79th General Session of the World Assembly of OIE Delegates in France — the country will favorably gain a foothold in the global meat market, particularly exports of pork and poultry meat products.
This means a greater local and export market and a safer meat to eat. South Korea is one of the major export prospect. The county have fmd outbreak and pork production is expected to decline by 760,000 metric tons.
Hope the government can also fully stop the illegal trade of double dead / botcha meat. FMD is out but botcha is still in.

Philippines is now completely FMD free and may now export meat and meat products to the rest of the world.
The OIE certification was received on behalf of the Philippine government and Sec. Alcala by agriculture assistant secretary for livestock Davinio Catbagan on May 26, 2011, in Paris, France, during the 79th general session of the OIE, May 22-27, 2011. The certificate was signed by OIE president Dr. Carlos A. Correa Messuti and director-general Bernard Vallat.
An average serving of pork has 14 times more pesticides than plant. I read this shocking statement from Health and Home magazine. I was not able to get the research source because it was not clearly stated. The first question that will come in your mind is how the pesticides got into pork meat.
Pesticides might be in form of antibiotics, growth promotants, supplements other anti disease medicines. Hogs need several shots of those medicines during the course of their life, average of three months for fattener.
Animal feeds ingredients consist of meat, fish, and plants that might be contaminated with chemicals from fertilizers, feeds, insecticides, herbicides and other foreign objects. Some chemicals are intentionally added to feed stuffs – growth promotants and nutrient supplements. A fattener eats twice a day for three months.
Pig pens need regular disinfection to kill microorganisms that might cause diseases. This chemical might be absorb by animals through consumption of feeds and water.
The meat itself can be consider as silent pesticide. The teeth and digestive system of human is not designed to eat meat. Our teeth resembles the teeth of other ruminants like goat, cow and horse . Have you seen a ruminant feeding on meat? To make the claim more convincing, many of the life threatening diseases are related to consumption of pork and other animal meat.
On the other hand, eating plants (fruits and vegetables) is very healthy. They contain almost no waste product that need to be excreted by our system. Although plants may also contain chemicals by application of pesticides, herbicides and fertilizers. The risk involve in consumption is still low compared to eating pork. Most of the chemicals plants contain are on surface and can be removed by thorough washing.

I still have left-over mixture of banana blossoms and ground pork. I cannot turn it to siomai because I have no molo/siomai wrapper left. I cannot turn it to lumpia either, I used up all my lumpia wrapper. The only thing left in my mind is to fry it to bite-size banana heart pork patties.
1) Scoop on teaspoon of mixture. See How to make banana heart pork siomai for mix preparation.
2) Fry using low heat in a shallow cooking oil. Turn sides occasionally until both sides are golden brown. Or, deep fry until golden brown.
3) Repeat until all mixture are used up. Do not make a large lump, this will result in uncooked middle part.
4) Serve with favorite sauce of choice.
